2 medium zucchini, diced

1 red bell pepper, diced

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon olive oil

8 corn tortillas

½ cup fresh cilantro, chopped

1 avocado, sliced

1 lime, cut into wedges

Optional: Salsa, sour cream, or your favorite hot sauce for serving

Instructions
 

Prepare the Filling: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sauté until translucent, about 3-4 minutes.

    Sauté the Vegetables: Add the diced zucchini and red bell pepper to the skillet. Cook for another 5-7 minutes until the vegetables are tender, stirring occasionally.

      Season It Up: Sprinkle the ground cumin, chili powder, smoked paprika, salt, and black pepper over the vegetable mixture. Stir well to ensure all the veggies are coated with the spices and cook for an additional 2-3 minutes. Remove from heat.

        Warm the Tortillas: While the veggie filling is cooking, warm your corn tortillas. You can do this by placing them in a dry skillet over medium heat for about 30 seconds on each side, or wrap them in foil and heat in the oven at 350°F (175°C) for about 10 minutes.

          Assemble the Tacos: Take a warm tortilla, and fill it with the zucchini filling. Top with fresh cilantro, avocado slices, and a squeeze of lime juice.

            Serve: If desired, add your favorite toppings like salsa or sour cream. Serve immediately with lime wedges on the side for an extra zing.
