Zucchini Sweet Corn Fritters

2 medium zucchinis, grated

1 cup sweet corn kernels (fresh or frozen)

1/2 cup all-purpose flour

1/4 cup cornmeal

2 large eggs

1/2 cup shredded cheddar cheese

1/4 cup green onions, finely chopped

2 tablespoons fresh parsley, chopped

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional for a kick)

Oil for frying (such as vegetable or canola)

Prepare the Zucchini: Place the grated zucchini in a clean dish towel or cheesecloth and squeeze out any excess moisture. This step is crucial to ensure your fritters are crispy and not soggy.

    Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, cornmeal, garlic powder, salt, black pepper, paprika, and cayenne pepper (if using). Mix thoroughly to combine the dry ingredients.

      Combine Wet Ingredients: In a separate bowl, beat the eggs, then add the grated zucchini, sweet corn kernels, shredded cheddar cheese, green onions, and chopped parsley. Stir well until everything is evenly mixed.

        Combine Mixtures: Add the wet ingredient mixture to the dry ingredient mixture. Stir until just combined, being careful not to overmix.

          Heat Oil: In a large skillet, heat about 1/4 inch of oil over medium heat. To test if the oil is ready, drop a small spoonful of the batter into the oil; if it sizzles, the oil is hot enough.

            Fry the Fritters: Drop spoonfuls (about 2 tablespoons each) of the batter into the hot oil, flattening them slightly with the back of the spoon. Cook for about 3-4 minutes on each side or until golden brown. Avoid overcrowding the pan; work in batches if necessary.

              Drain Excess Oil: Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil.
