2 medium zucchini, grated

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup canned diced tomatoes, drained

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

1 cup cream cheese, softened

1 cup sharp cheddar cheese, shredded

½ cup Monterey Jack cheese, shredded

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Prepare Zucchini: Start by grating the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. This step helps prevent the dip from becoming too watery.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another 1 minute until fragrant.

      Cook Zucchini: Add the grated zucchini to the skillet. Season with salt, pepper, cumin, smoked paprika, and chili powder. Cook for about 5 minutes, stirring occasionally, until the zucchini has softened.

        Mix in Tomatoes & Cheese: Reduce the heat to low and stir in the drained diced tomatoes. Add the softened cream cheese in chunks, allowing it to melt slowly into the mixture. Stir until fully combined.

          Add Cheddar & Monterey Jack: Gradually add the sharp cheddar and Monterey Jack cheeses, stirring continuously until the cheeses are melted and the mixture is creamy. Taste and adjust seasoning with additional salt and pepper if needed.
