2 medium zucchinis

1 teaspoon salt

½ cup all-purpose flour (or almond flour for a gluten-free option)

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon dried oregano

½ teaspoon black pepper

Olive oil spray or cooking spray

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: Slice the zucchinis into thin rounds (about ¼ inch thick). Place the slices in a colander and sprinkle with salt. Let them sit for about 15-20 minutes to draw out excess moisture.

      Set Up Breading Station: In three separate bowls, set up your breading station:

        - In the first bowl, add the flour and set aside.

          - In the second bowl, beat the eggs until well mixed.

            - In the third bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, and black pepper.

              Dry the Zucchini: After the zucchinis have rested, pat them dry with a paper towel to remove excess moisture. This helps in achieving crispiness.

                Coat the Zucchini: Dip each zucchini slice into the flour first, shaking off any excess. Next, coat it in the beaten eggs, and finally, press it into the breadcrumb-Parmesan mixture until fully coated.

                  Arrange on Baking Sheet: Place the coated zucchini crisps in a single layer on the prepared baking sheet. Make sure they don’t touch each other for optimal crispness. Lightly spray the tops with olive oil spray.

                    Bake: Bake in the preheated oven for 20-25 minutes or until they are golden brown and crispy, flipping them halfway through for even cooking.

                      Serve and Garnish: Remove from the oven and let them cool for a few minutes. Garnish with freshly chopped parsley before serving. Enjoy warm as an appetizer or snack!
