Zucchini Lasagna Rolls

4 medium zucchinis

2 cups ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 egg

2 cups marinara sauce

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Using a mandoline slicer or a sharp knife, slice the zucchinis lengthwise into thin strips (about 1/8 inch thick). Lay the strips on paper towels, sprinkle with salt, and let them sit for about 15 minutes to draw out excess moisture.

    Make the Filling: In a mixing bowl, combine the ricotta cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined and creamy.

      Assemble the Rolls: Pat the zucchini strips dry with paper towels. On each strip, spread about 1-2 tablespoons of the cheese mixture. Roll the zucchini slice tightly to form a roll and place seam-side down in a 9x13 inch baking dish. Repeat until all zucchini pieces and filling are used.

        Add Marinara Sauce: Pour the marinara sauce evenly over the assembled zucchini rolls, making sure to cover them completely. Sprinkle the remaining mozzarella cheese on top.

          Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, uncover and bake for an additional 10-15 minutes or until the cheese is bubbly and slightly golden.

            Serve: Once done, remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm and enjoy!
