Zucchini Crust Breakfast Pizza

3 medium zucchini, grated

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 large eggs

1 cup all-purpose flour (or almond flour for a gluten-free option)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

4 large eggs (for topping)

1 cup cooked and crumbled breakfast sausage or cooked diced bacon (optional)

1 cup cherry tomatoes, halved

1/2 cup bell peppers, diced

Fresh basil for garnish

Olive oil for drizzling

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out as much excess moisture as possible.

      Make the Crust Mixture: In a large bowl, combine the drained zucchini, shredded mozzarella, Parmesan cheese, eggs, flour, garlic powder, onion powder, oregano, salt, and pepper. Mix until well combined.

        Form the Crust: Transfer the zucchini mixture to the prepared baking sheet. Using your hands or a spatula, spread the mixture into a round or rectangular crust, about 1/4 inch thick.

          Pre-bake the Crust: Bake in the preheated oven for 15-20 minutes, or until the edges start to turn golden brown.

            Prepare the Toppings: While the crust is baking, scramble the additional eggs in a pan over medium heat until just set. Remove from heat and set aside.

              Add Toppings: Once the crust is pre-baked, remove it from the oven. Evenly distribute the scrambled eggs, breakfast sausage or bacon (if using), cherry tomatoes, and bell peppers over the crust.
