For the Zucchini Bread:

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1 cup granulated sugar

1/2 cup brown sugar, packed

3 large eggs

1/2 cup vegetable oil

2 cups grated zucchini (about 2 medium zucchinis)

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

For the Pasta Delight:

8 ounces of your favorite pasta (spaghetti, fettuccine, or penne)

2 tablespoons olive oil

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

Salt and pepper to taste

1/4 cup fresh basil, chopped

1/2 cup grated Parmesan cheese

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.

      Prepare Zucchini Bread Mixture:

        In a large bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. In another bowl, whisk together the granulated sugar, brown sugar, eggs, vegetable oil, grated zucchini, and vanilla extract until well blended. Slowly incorporate the dry ingredients into the wet ingredients, being careful not to overmix. If desired, fold in the chopped nuts.

          Bake the Zucchini Bread:

            Pour the batter into the prepared loaf pan. Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for 10 minutes, then remove it from the pan and cool completely on a wire rack.

              Cook the Pasta:

                While the zucchini bread is baking, cook the pasta according to package instructions until al dente. Drain and set aside.

                  Make the Pasta Sauce:

                    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the halved cherry tomatoes and Italian seasoning. Cook for about 5-7 minutes until the tomatoes are soft and juicy. Season with salt and pepper to taste.

                      Combine Pasta and Sauce:

                        Add the cooked pasta to the skillet with the tomato mixture. Toss everything together gently to combine. Add fresh basil and half of the grated Parmesan cheese, mixing until well combined.

                          Serve:

                            Slice the zucchini bread into pieces and serve warm alongside a generous portion of the pasta delight. Top each serving of pasta with remaining Parmesan cheese and additional fresh basil if desired.
