For the Chicken Marinade:

1 lb (450g) chicken breast, boneless and skinless

1/4 cup fresh lime juice (about 2 limes)

2 tbsp olive oil

3 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1/2 tsp salt

1/4 tsp black pepper

1/4 cup fresh cilantro, chopped

For the Rice:

1 cup jasmine rice

2 cups chicken broth (or water)

Zest of 1 lime

1 tbsp olive oil

Salt to taste

For the Toppings:

1 cup cherry tomatoes, halved

1 avocado, sliced

1 cup black beans, drained and rinsed

1/4 cup red onion, finely chopped

1/4 cup corn (fresh, canned, or frozen)

1/4 cup crumbled feta cheese (optional)

Extra lime wedges for serving

Marinate the Chicken: In a mixing bowl, whisk together lime juice, olive oil, minced garlic, cumin, chili powder, salt, black pepper, and chopped cilantro. Add the chicken breasts to the bowl, ensuring they're well coated. Cover with plastic wrap and marinate for at least 30 minutes (or up to 2 hours in the refrigerator for best flavor).

    Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a pot, bring the chicken broth (or water), lime zest, olive oil, and a pinch of salt to a boil. Add the rice, stir once, cover, and reduce heat to low. Cook for 15 minutes or until the liquid is absorbed and the rice is tender. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.

      Cook the Chicken: Preheat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side, or until cooked through and no longer pink in the center (internal temperature should reach 165°F or 74°C). Remove from heat and let it rest for a few minutes before slicing.

        Assemble the Bowls: In each bowl, add a serving of lime-infused rice. Top with sliced grilled chicken, cherry tomatoes, avocado, black beans, red onion, corn, and feta cheese if using.
