Ingredients
  

4 cups seedless watermelon, cubed

1 cup crumbled feta cheese

1/2 red onion, thinly sliced

1/4 cup fresh mint leaves, chopped

1/4 cup fresh basil leaves, chopped

1/4 cup extra-virgin olive oil

2 tablespoons balsamic vinegar

Zest of 1 lime

Juice of 1 lime

Salt and pepper to taste

Optional: 1/4 cup chopped cucumber for added crunch

Instructions
 

In a large mixing bowl, combine the cubed watermelon, crumbled feta, thinly sliced red onion, and chopped cucumber (if using). Gently toss them together to avoid breaking the watermelon pieces.

    In a separate small bowl, prepare the dressing: whisk together the olive oil, balsamic vinegar, lime zest, lime juice, and a pinch of salt and pepper until well combined.

      Pour the dressing over the watermelon mixture and toss gently to coat all the ingredients evenly.

        Fold in the chopped mint and basil, allowing the fresh herbs to infuse their flavors into the salad.

          Taste and adjust seasoning if necessary, adding more salt and pepper as desired.

            Let the salad sit for about 10 minutes at room temperature to allow the flavors to meld together.
