Ingredients

2 cups fresh blueberries

1 cup pineapple chunks

1 avocado, diced

1 lime, zested and juiced

2 tablespoons honey

1 tablespoon fresh mint, finely chopped

1/4 teaspoon sea salt

Wooden or metal skewers

Instructions

Prepare the Marinade: In a mixing bowl, combine lime juice, lime zest, honey, finely chopped mint, and sea salt. Stir well until the honey is fully dissolved in the mixture.

Marinate the Ingredients: In a separate bowl, place the fresh blueberries, pineapple chunks, and diced avocado. Drizzle the marinade over the fruit and gently toss to combine, ensuring everything is coated. Allow the mixture to marinate for about 15-20 minutes.

Prepare the Skewers: If using wooden skewers, soak them in water for 15 minutes to prevent burning. Then, thread the marinated blueberries, pineapple, and avocado onto the skewers, alternating between the three ingredients for visual appeal.

Grill or Chill: For a warm version, preheat a grill to medium heat and grill the skewers for about 2-3 minutes on each side until the blueberries begin to burst, and the pineapple has grill marks. Alternatively, you can serve them chilled by placing them directly in the refrigerator for an additional 20 minutes before serving.

Serve: Arrange the skewers on a platter and drizzle any remaining marinade over the top. Garnish with additional mint leaves, if desired. Serve as a refreshing appetizer or a light dessert!
