1 cup rolled oats

1 cup whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1 cup canned pumpkin puree

1/2 cup maple syrup (or honey)

1/3 cup unsweetened applesauce

1 large egg

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

1/4 cup raisins or chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray it with non-stick cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Stir until well mixed and set aside.

      Combine Wet Ingredients: In another bowl, whisk together the pumpkin puree, maple syrup, applesauce, egg, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix. If using, fold in the chopped nuts and raisins or chocolate chips.

          Fill Molds: Scoop the batter into the prepared muffin tins, filling each cup about 2/3 full.

            Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

              Cool: Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
