1 cup cucumber, sliced thinly

1/2 red onion, thinly sliced

1/4 cup fresh mint leaves, chopped

1/4 cup feta cheese, crumbled (optional)

Juice of 1 lime

2 tablespoons olive oil

Salt and pepper to taste

Optional: 1/4 teaspoon chili powder for a kick

Instructions

In a large bowl, combine the diced watermelon, avocado, cucumber, and red onion.

Add the chopped mint leaves and gently toss to mix the ingredients without mashing the avocado.

In a small bowl, whisk together the lime juice, olive oil, salt, pepper, and chili powder (if using) until well combined.

Drizzle the dressing over the salad and gently toss again to ensure everything is evenly coated.

If using, sprinkle the crumbled feta cheese on top before serving.
