1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon salt

1 cup chopped apples (about 1-2 medium apples, peeled and diced)

1/4 cup chopped walnuts or pecans (optional)

2 tablespoons granulated sugar (for topping)

1 teaspoon ground cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with baking spray.

    Mix Wet Ingredients: In a large mixing bowl, whisk together the Greek yogurt, applesauce, brown sugar, egg, oil, and vanilla extract until smooth and well combined.

      Combine Dry Ingredients: In a separate bowl, sift together the flour, baking powder, baking soda, ground cinnamon, nutmeg, and salt.

        Incorporate Dry into Wet: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

          Fold in Apples and Nuts: Gently fold in the diced apples and nuts (if using) into the batter until evenly distributed.

            Prepare Muffin Tins: Using a spoon or ice cream scoop, fill each muffin cup about two-thirds full with batter.
