4 large russet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup heavy cream

1 cup milk (whole or 2%)

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and freshly ground black pepper to taste

4 slices of crispy bacon, chopped (optional)

1 cup shredded cheddar cheese

½ cup sour cream

Fresh chives or green onions for garnish

Instructions
 

Sauté Aromatics: In a large pot over medium heat, add a splash of oil. Sauté the chopped onion for about 3-4 minutes until it becomes translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.

    Cook Potatoes: Add the diced potatoes to the pot, along with the smoked paprika and dried thyme. Stir well to coat the potatoes in the spices.

      Add Broth: Pour in the vegetable or chicken broth, ensuring the potatoes are fully submerged. Increase the heat to bring the mixture to a boil, then reduce to a simmer. Cover and cook for about 15-20 minutes or until the potatoes are tender enough to easily mash with a fork.

        Blend Until Smooth: Using an immersion blender, carefully purée the soup until smooth and creamy. If you don’t have an immersion blender, you can carefully transfer batches to a blender. Be sure to allow steam to escape to avoid splatters.

          Add Cream and Milk: Stir in the heavy cream and milk, mixing until well combined. Let the soup simmer gently for another 5-10 minutes. If it’s too thick, add more broth or milk to reach your desired consistency.

            Season: Taste and season with salt and pepper as needed.

              Serve: Ladle the warm soup into bowls. Top with crispy bacon, shredded cheddar cheese, a dollop of sour cream, and sprinkle with fresh chives or green onions.
