2 lbs ripe tomatoes, chopped

1 medium onion, diced

3 cloves garlic, minced

1 medium carrot, diced

1 celery stalk, diced

2 cups vegetable broth

1 cup heavy cream (or coconut cream for a vegan option)

1 cup fresh basil leaves, packed

2 tbsp olive oil

1 tsp sugar

Salt and pepper to taste

Crusty bread for serving (optional)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes, or until the vegetables are soft and the onions are translucent. Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Cook the Tomatoes: Add the chopped tomatoes to the pot along with the sugar, salt, and pepper. Cook for about 10-15 minutes, stirring occasionally, until the tomatoes break down and release their juices.

      Add Broth and Simmer: Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 20 minutes, allowing the flavors to meld together.

        Blend the Bisque: Remove the pot from heat and let it cool slightly. Using an immersion blender, blend the soup until smooth and creamy. (Alternatively, you can carefully transfer it to a regular blender in batches and blend until smooth.)

          Incorporate the Cream and Basil: Return the bisque to low heat and stir in the heavy cream and fresh basil leaves. Allow it to warm through for an additional 5 minutes without boiling.

            Adjust Seasoning: Taste and adjust seasoning with more salt or pepper if needed.

              Serve and Enjoy: Ladle the bisque into bowls and garnish with extra basil leaves if desired. Serve warm with crusty bread on the side for dipping.
