Veggie Loaded Egg Bake

8 large eggs

1 cup whole milk

1 cup shredded cheddar cheese

1 cup diced bell peppers (red, yellow, and green)

1 cup chopped fresh spinach

1/2 cup finely chopped red onion

1/2 cup cherry tomatoes, halved

1/2 cup diced zucchini

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh herbs (e.g., parsley and thyme) for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and bell peppers, and sauté for about 2-3 minutes until they begin to soften.

      Add Spinach and Zucchini: Stir in the chopped spinach and diced zucchini. Continue to sauté for another 2-3 minutes until the spinach is wilted and zucchini is tender. Remove from heat and let cool slightly.

        Whisk the Eggs: In a large mixing bowl, crack the eggs and add the whole milk. Whisk together until fully combined and slightly frothy.

          Season: Add garlic powder, paprika, salt, and pepper to the egg mixture and mix well.

            Incorporate Veggies and Cheese: Fold in the sautéed vegetable mix, halved cherry tomatoes, and shredded cheddar cheese into the egg mixture until everything is evenly distributed.

              Prepare Baking Dish: Grease a 9x13 inch baking dish with cooking spray or a little olive oil. Pour the egg and veggie mixture into the prepared dish.
