1 can (15 oz) chickpeas, drained and rinsed

1 medium onion, finely chopped

3 cloves garlic, minced

1-inch piece ginger, grated

1 can (14 oz) coconut milk

1 can (14 oz) diced tomatoes

2 tablespoons coconut oil (or olive oil)

2 teaspoons curry powder

1 teaspoon ground cumin

1 teaspoon ground coriander

½ teaspoon turmeric powder

½ teaspoon chili powder (adjust for spice preference)

Salt and pepper to taste

2 cups fresh spinach, roughly chopped

Juice of 1 lime

Fresh cilantro for garnish

Cooked basmati rice or quinoa, for serving

Sauté Aromatics: In a large saucepan, heat the coconut oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and grated ginger, and sauté for another 1-2 minutes until fragrant.

    Add Spices: Sprinkle the curry powder, cumin, coriander, turmeric, and chili powder into the pan. Stir to coat the onions evenly in the spices, and toast for about 1 minute to enhance the flavors.

      Incorporate Tomatoes: Pour in the diced tomatoes with their juices and bring to a simmer. Allow the mixture to cook for about 5 minutes, occasionally stirring.

        Add Chickpeas & Coconut Milk: Add the drained chickpeas to the saucepan, followed by the coconut milk. Stir well to combine and bring the curry to a gentle simmer. Allow it to cook for 15-20 minutes, stirring occasionally.

          Finish the Curry: Once the curry has thickened slightly, add the chopped spinach and cook for another 2-3 minutes until it wilts. Season with salt, pepper, and lime juice to taste.
