For the Danish Dough:

2 ½ cups all-purpose flour

1 tablespoon sugar

1 teaspoon salt

1 packet (2 ¼ teaspoons) active dry yeast

1 cup unsweetened almond milk (warmed)

¼ cup coconut oil (melted)

1 teaspoon vanilla extract

For the Strawberry Filling:

1 cup fresh strawberries (hulled and diced)

2 tablespoons maple syrup

1 tablespoon cornstarch

1 teaspoon lemon juice

For the Vegan Cream Cheese Filling:

1 cup vegan cream cheese

¼ cup powdered sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

For Topping:

Vegan powdered sugar (for dusting)

Fresh strawberry slices for garnish (optional)

Instructions
 

Prepare the Dough:

    - In a large bowl, combine the warm almond milk and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until it becomes frothy.

      - Add the melted coconut oil and vanilla extract. Stir to combine.

        - In another bowl, whisk the flour and salt together. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.

          - Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

            Prepare the Strawberry Filling:

              - In a small saucepan, combine the diced strawberries, maple syrup, cornstarch, and lemon juice over medium heat. Cook for about 5-7 minutes, stirring occasionally, until the strawberries soften and the mixture thickens. Remove from heat and let it cool.

                Prepare the Vegan Cream Cheese Filling:

                  - In a bowl, beat together the vegan cream cheese, powdered sugar, lemon juice, and vanilla extract until smooth and creamy. Set aside.

                    Assemble the Danish:

                      - Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

                        - Once the dough has risen, roll it out on a floured surface into a rectangle, about ¼ inch thick. Cut it into 6 squares.

                          - Place a spoonful of the vegan cream cheese filling in the center of each square, followed by a spoonful of the strawberry filling. Fold the corners of the dough squares toward the center, pinching them together to form the Danish shape.

                            - Place the assembled Danishes on the prepared baking sheet. Cover them lightly with a kitchen towel and let them rise for another 20-30 minutes.

                              Bake the Danishes:

                                - Bake the Danishes in the preheated oven for 15-20 minutes or until golden brown. Remove from the oven and let them cool for a few minutes.

                                  Serve:

                                    - Dust the cooled Danishes with vegan powdered sugar. Garnish with fresh strawberry slices if desired and serve warm.
