Vanilla Crepes

1 cup all-purpose flour

2 large eggs

1 ½ cups milk (whole or 2%)

2 tablespoons granulated sugar

1 teaspoon vanilla extract

2 tablespoons melted butter (plus extra for the pan)

1/4 teaspoon salt

Optional toppings: fresh berries, whipped cream, maple syrup, or chocolate sauce

Instructions
 

Make the Batter: In a mixing bowl, whisk together the flour, sugar, and salt. In a separate bowl, beat the eggs and then whisk in the milk and vanilla extract. Gradually add the wet ingredients into the flour mixture, stirring until smooth. Finally, mix in the melted butter until fully incorporated. Let the batter rest for 30 minutes at room temperature.

    Preheat the Pan: Heat a non-stick skillet or crepe pan over medium heat. Add a small amount of butter to coat the surface.

      Cook the Crepes: Pour about 1/4 cup of batter into the center of the heated pan and quickly tilt the pan in a circular motion to spread the batter evenly. Cook for approximately 1-2 minutes until the edges start to lift and the bottom is lightly golden.

        Flip the Crepe: Carefully slide a spatula under the crepe, flip it over, and cook for an additional 30 seconds to 1 minute until lightly golden. Transfer the cooked crepe to a plate and repeat the process with the remaining batter, adding more butter to the pan as needed.

          Serve: Stack the crepes in layers on a serving plate. Serve warm with your choice of toppings such as fresh berries, whipped cream, a drizzle of maple syrup, or a splash of chocolate sauce.
