Tuscan Mac and Cheese

8 oz elbow macaroni or cavatappi pasta

3 cups whole milk

1 cup heavy cream

2 cups grated sharp white cheddar cheese

1 cup grated Parmesan cheese

2 tbsp unsalted butter

2 tbsp all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1/2 tsp red pepper flakes (adjust to taste)

1 tsp Italian seasoning (or a mix of dried basil, oregano, and thyme)

Salt and black pepper, to taste

1 cup sun-dried tomatoes, chopped

1 cup fresh spinach, roughly chopped

1/2 cup panko breadcrumbs

2 tbsp olive oil

Fresh basil, for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the macaroni or cavatappi and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for 1-2 minutes until golden, forming a roux. Gradually add the whole milk and heavy cream, whisking constantly until the mixture thickens (about 5-7 minutes).

      Add the Cheeses: Lower the heat to medium-low and stir in the sharp white cheddar cheese and Parmesan cheese, mixing until melted and smooth. Season the sauce with garlic powder, onion powder, red pepper flakes, Italian seasoning, salt, and black pepper to taste.

        Combine Pasta and Sauce: Add the cooked pasta to the cheese sauce. Stir in the sun-dried tomatoes and fresh spinach, ensuring everything is evenly coated in the delicious cheese sauce.

          Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture into a greased 9x13 inch baking dish.

            Make the Topping: In a small bowl, combine panko breadcrumbs with olive oil, mixing well. Sprinkle the breadcrumb mixture evenly over the top of the mac and cheese.

              Bake: Bake in the preheated oven for 20-25 minutes, or until the top is golden and crispy.

                Garnish and Serve: Once out of the oven, let it cool for a few minutes. Garnish with fresh basil before serving to enhance its flavor and presentation.
