Ingredients

For the Cake:

1 ¾ cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup buttermilk

For the Caramel Sauce:

1 cup granulated sugar

6 tablespoons unsalted butter, cubed

½ cup heavy cream

1 teaspoon vanilla extract

A pinch of sea salt

For the Toppings:

1 cup chopped pecans

1 cup semi-sweet chocolate chips

Extra caramel sauce for drizzling

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Make the Cake Batter: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

Combine Dry and Wet Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined, being careful not to overmix.

Bake the Cakes: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Make the Caramel Sauce: In a medium saucepan over medium heat, combine the sugar and cook, stirring constantly until melted and golden brown (about 8-10 minutes). Once melted, add the cubed butter and stir until completely melted and combined. Gradually pour in the heavy cream while stirring (be careful, it may bubble up). Remove from heat and stir in vanilla extract and sea salt. Allow to cool slightly.

Assemble the Cake: Place one cake layer on a serving platter. Drizzle half of the caramel sauce over the first layer, then sprinkle half of the chopped pecans and a handful of chocolate chips on top. Place the second cake layer on top and repeat the process: drizzling with caramel, topping with pecans and chocolate chips.

Finish the Cake: Drizzle the remaining caramel sauce over the top of the cake, and add any remaining pecans and chocolate chips to garnish.

Serve: Let the cake sit for a bit to allow the caramel to set slightly before slicing. Enjoy your Turtle Caramel Cake with a scoop of vanilla ice cream for an extra indulgence!
