Tuna Melt Stuffed Tomatoes

4 large ripe tomatoes

1 can (5 oz) tuna in water, drained and flaked

1/4 cup mayonnaise

1/4 cup Greek yogurt

1/2 cup shredded cheddar cheese

1/4 cup finely diced red onion

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon dried dill or 1 tablespoon fresh dill, chopped

Salt and pepper to taste

1/2 cup breadcrumbs (optional, for topping)

Fresh parsley or dill for garnish

Prepare the Tomatoes: Preheat your oven to 350°F (175°C). Carefully cut the tops off the tomatoes and scoop out the insides using a small spoon or melon baller. Make sure not to puncture the outer walls. Place the hollowed tomatoes upside down on a paper towel to drain excess moisture.

    Make the Tuna Filling: In a medium mixing bowl, combine the flaked tuna, mayonnaise, Greek yogurt, cheddar cheese, diced red onion, Dijon mustard, lemon juice, and dill. Mix well until all ingredients are thoroughly incorporated. Season with salt and pepper to taste.

      Stuff the Tomatoes: Turn the hollowed tomatoes right side up and gently fill each one with the tuna mixture, packing it slightly to ensure a generous amount fits in.

        Optional Topping: If you desire a crunchy topping, mix the breadcrumbs with a tablespoon of olive oil. Sprinkle the mixture evenly over the stuffed tomatoes for an added texture.
