2 cups elbow macaroni

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 cups whole milk

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1/2 cup Parmesan cheese, grated

2 tablespoons truffle oil (adjust to taste)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

1/2 cup panko breadcrumbs

Cooking spray or extra oil for greasing

Cook the Pasta: Bring a large pot of salted water to boil. Add the elbow macaroni and cook until al dente according to package instructions. Drain and set aside.

    Make the Cheese Sauce:

      - In a medium saucepan, melt the unsalted butter over medium heat. Once melted, whisk in the flour to create a roux. Continue whisking for about 1-2 minutes until it turns golden.

        - Gradually add the whole milk, whisking constantly to prevent lumps. Cook the mixture until it thickens, about 5-7 minutes.

          - Reduce the heat to low and stir in the sharp cheddar, Gruyère, and Parmesan cheese until melted and smooth.

            - Add truffle oil, garlic powder, onion powder, and season with salt and black pepper to taste. Mix well.

              Combine Macaroni and Cheese Sauce:

                - In a large mixing bowl, combine the cooked macaroni with the cheese sauce until the pasta is well coated. Allow it to cool for about 10-15 minutes.

                  Prepare Bites:

                    - Preheat your oven to 400°F (200°C).

                      - Grease a mini muffin pan with cooking spray or some oil.

                        - Once the macaroni mixture has cooled slightly, use a cookie scoop or your hands to form small balls (about 1-1.5 inches in diameter) and place each ball into the muffin pan.

                          Add the Topping:

                            - Sprinkle panko breadcrumbs over each mac and cheese bite generously for that extra crunch.

                              Bake:

                                - Place the muffin pan in the preheated oven and bake for 15-20 minutes, or until the tops are golden brown and crispy.
