1 cup coconut milk (or almond milk)

1/2 cup fresh mango purée (about 1 ripe mango, blended)

1/4 cup chia seeds

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

Fresh mango cubes, for topping

Toasted coconut flakes, for garnish

Fresh mint leaves, for garnish

Instructions
 

Combine Wet Ingredients: In a medium mixing bowl, whisk together the coconut milk, mango purée, honey or maple syrup, vanilla extract, and sea salt until smooth and well combined.

    Add Chia Seeds: Slowly sprinkle in the chia seeds, whisking continuously to prevent clumping. Ensure that the chia seeds are evenly distributed throughout the liquid.

      Refrigerate: Cover the bowl with plastic wrap or transfer the mixture into individual serving glasses. Refrigerate for at least 4 hours or overnight until the chia seeds have expanded and the pudding has thickened.
