1 package (9 oz) fresh cheese tortellini

2 cups cherry tomatoes, halved

1 cup fresh basil leaves, roughly chopped

1/2 cup mozzarella balls (bocconcini), halved

1/4 cup red onion, thinly sliced

3 tablespoons olive oil

2 tablespoons balsamic vinegar

1 clove garlic, minced

1 teaspoon honey

Salt and pepper to taste

Grated Parmesan cheese for garnish (optional)

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente, usually about 3-5 minutes. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prep the Vegetables: While the tortellini cools, prepare the vegetables. In a large mixing bowl, combine the halved cherry tomatoes, chopped basil leaves, mozzarella balls, and sliced red onion.
