Ingredients

1 pre-made pie crust or puff pastry sheet

4 medium ripe tomatoes, sliced

1 cup fresh basil leaves, packed

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper, to taste

1 teaspoon balsamic vinegar (optional)

1 egg (for egg wash)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Crust: Roll out the pie crust or puff pastry on a lightly floured surface to fit a tart pan. Gently press the crust into the tart pan, trimming any excess from the edges. Prick the bottom with a fork to prevent puffing.

Prepare the Filling: In a mixing bowl, combine the ricotta cheese, garlic, olive oil, salt, and pepper. Mix until smooth.

Layer the Ingredients: Spread the ricotta mixture evenly over the bottom of the crust. Layer the sliced tomatoes on top of the ricotta in a circular pattern, slightly overlapping.

Add Cheese and Basil: Sprinkle the shredded mozzarella and grated Parmesan cheese over the tomatoes. Tear the fresh basil leaves and scatter them on top. Drizzle with a little balsamic vinegar if desired for added depth.

Egg Wash: Beat the egg in a small bowl and brush it over the edges of the crust to give it a golden finish.

Bake: Place the tart in the preheated oven and bake for 30-35 minutes or until the crust is golden brown and the cheese is bubbly.

Cool and Serve: Remove the tart from the oven and allow it to cool for 10 minutes. Slice into wedges and serve warm or at room temperature.
