1 block firm tofu (14 oz), pressed and crumbled

1 tablespoon olive oil

1 bell pepper (red or yellow), diced

1 cup mushrooms, diced (shiitake or button)

2 cloves garlic, minced

1 tablespoon soy sauce or tamari (for gluten-free)

1 teaspoon sesame oil

1 tablespoon rice vinegar

1 teaspoon grated fresh ginger

1 cup strawberries, hulled and halved

2 tablespoons honey or maple syrup (for vegan)

1 tablespoon apple cider vinegar

1 head of butter or romaine lettuce, leaves separated

Sesame seeds and chopped green onions for garnish

Instructions
 

Prepare the Tofu: Start by pressing the tofu for at least 15 minutes to remove excess moisture. After it’s pressed, crumble the tofu into bite-sized pieces.

    Make the Stir-Fry: In a large skillet, heat the olive oil over medium heat. Add the crumbled tofu and cook for about 5 minutes until golden. Then, add the diced bell pepper and mushrooms; sauté for another 5 minutes or until they soften.

      Flavor the Mixture: Stir in the minced garlic, soy sauce or tamari, sesame oil, rice vinegar, and fresh ginger. Cook for an additional 2-3 minutes, allowing the flavors to meld.

        Prepare the Strawberry Glaze: In a small saucepan, combine the strawberries, honey or maple syrup, and apple cider vinegar. Cook over medium heat for about 5-7 minutes, stirring occasionally, until the strawberries are soft and the mixture becomes syrupy. Remove from heat and set aside to slightly cool.

          Assemble the Wraps: Lay out the lettuce leaves on a serving plate. Spoon generous portions of the tofu mixture into each leaf.
