2 cups rolled oats

2 cups almond milk (or your preferred milk)

2 medium apples, peeled, cored, and diced

1/3 cup maple syrup (or honey)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup chopped walnuts (optional)

1/4 cup dried cranberries or raisins (optional)

Cooking spray or coconut oil for greasing

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or coconut oil to prevent sticking.

    Prepare the Oat Mixture: In a large mixing bowl, combine the rolled oats, almond milk, maple syrup, vanilla extract, ground cinnamon, nutmeg, and salt. Stir until the oats are well coated and the mixture is consistent.

      Add Apples: Fold in the diced apples, chopped walnuts (if using), and dried cranberries or raisins (if using) into the oat mixture. Mix gently to ensure even distribution.

        Fill Muffin Tin: Spoon the oat mixture into each muffin cup, filling them about three-quarters full. Press down gently to pack the mixture into the cups.

          Bake the Oat Cups: Place the muffin tin in the preheated oven and bake for 25-30 minutes or until the tops are golden and the oat cups have set. They should feel firm to the touch.
