1 lb (450g) boneless, skinless chicken thighs, diced

1 tablespoon vegetable oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/4 cup low-sodium soy sauce

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)

For the Wraps:

1 head of butter or romaine lettuce, leaves separated and washed

1 carrot, julienned

1 small cucumber, diced

1/4 red bell pepper, thinly sliced

2 green onions, chopped

Sesame seeds for garnish

Fresh cilantro or mint for garnish (optional)

Marinate the Chicken: In a medium bowl, combine the soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and grated ginger. Add the diced chicken thighs and mix well. Allow the chicken to marinate for at least 15-30 minutes for maximum flavor.

    Cook the Chicken: Heat the vegetable oil in a large non-stick skillet over medium-high heat. Once hot, add the marinated chicken (discard any excess marinade). Cook for 5-7 minutes, stirring occasionally until the chicken is cooked through and golden brown.

      Thicken the Sauce: Create a slurry by mixing cornstarch and water in a small bowl. Pour this mixture into the skillet once the chicken is cooked. Stir well and continue cooking for another 2 minutes, allowing the sauce to thicken. Remove from heat.

        Prepare the Wraps: While the chicken is cooking, prepare your veggies. Julienne the carrot, dice the cucumber, and slice the red bell pepper. Chop the green onions and set aside.

          Assemble the Wraps: Take a lettuce leaf and spoon a generous amount of the teriyaki chicken into the center. Top with julienned carrots, diced cucumber, sliced bell pepper, and chopped green onions.
