2 ripe mangos, peeled, pitted, and julienned

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 bell pepper (red or yellow), julienned

1 small red onion, thinly sliced

1 cup shredded carrots

1/2 cup fresh cilantro, chopped

1/4 cup toasted pumpkin seeds (or sunflower seeds)

For the Tangy Dressing:

1/4 cup apple cider vinegar

3 tablespoons honey (or maple syrup for a vegan option)

2 tablespoons lime juice (freshly squeezed)

1 tablespoon Dijon mustard

1/3 cup olive oil

Prepare the vegetables: In a large mixing bowl, combine the julienned mangos, green cabbage, red cabbage, bell pepper, red onion, shredded carrots, and chopped cilantro. Toss gently to mix all the ingredients uniformly.
