2 ripe mangoes, peeled, pitted, and julienned

1 cup green cabbage, shredded

1 cup red cabbage, shredded

1 bell pepper (red or yellow), thinly sliced

1 carrot, grated

½ cup red onion, thinly sliced

¼ cup fresh cilantro, chopped

½ cup Greek yogurt (or vegan alternative)

2 tablespoons lime juice

1 tablespoon apple cider vinegar

1 tablespoon honey (or agave syrup for vegan)

1 teaspoon ground cumin

½ teaspoon salt

¼ teaspoon freshly ground black pepper

A pinch of red pepper flakes (optional for heat)

Instructions
 

In a large mixing bowl, combine the julienned mangoes, shredded green cabbage, shredded red cabbage, sliced bell pepper, grated carrot, and sliced red onion. Toss gently to combine all the veggies and fruits.

    In a separate small bowl, whisk together the Greek yogurt, lime juice, apple cider vinegar, honey, ground cumin, salt, black pepper, and red pepper flakes until smooth and well blended.

      Pour the dressing over the mango and cabbage mixture. Gently toss everything together until the slaw is evenly coated with the dressing.

        Add the chopped cilantro and toss again, adjusting seasoning if necessary.
