Ingredients

2 cans young green jackfruit in water (20 oz each), drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 cup BBQ sauce (choose your favorite or homemade)

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

8 slider buns

Fresh coleslaw (for topping, optional)

Pickles (for garnish, optional)

Instructions

Prepare the Jackfruit: After draining and rinsing the jackfruit, use your hands or a fork to shred the jackfruit pieces into a pulled meat-like texture. Set aside.

Cook the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, or until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

Add the Jackfruit: Incorporate the shredded jackfruit into the skillet with the onion and garlic. Stir well to combine and let it cook for about 5-7 minutes, allowing it to absorb the flavors.

Mix in the Sauce: Add the BBQ sauce, apple cider vinegar, smoked paprika, cayenne pepper, salt, and pepper to the jackfruit mixture. Stir everything together until the jackfruit is well coated in the sauce.

Simmer: Continue to cook on medium-low heat for about 20-25 minutes, stirring occasionally. The jackfruit should become tender and infused with the delicious BBQ flavors. If the mixture looks a bit dry, feel free to add a splash of water or additional BBQ sauce.

Assemble the Sliders: Once the jackfruit is ready, remove it from heat. Toast the slider buns if desired. Serve the pulled jackfruit on the bottom half of each slider bun, top with fresh coleslaw, and add pickles if you like.

Serve: Place the top half of the buns on and serve immediately. Enjoy your tangy BBQ pulled jackfruit sliders as a delicious and satisfying vegan meal!
