2 cans (20 oz each) young green jackfruit in brine or water, drained and rinsed

1 medium red onion, finely chopped

4 cloves garlic, minced

1 cup BBQ sauce (homemade or store-bought)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

1 tablespoon apple cider vinegar

12 slider buns

Coleslaw (optional, for topping)

Fresh parsley or cilantro (for garnish)

Prep the Jackfruit: Begin by preparing the jackfruit. Using your hands, break the jackfruit into smaller pieces, removing any tough cores and keeping the softer flesh. The pieces should resemble pulled pork.

    Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add the chopped red onion and cook for about 5 minutes, until translucent. Stir in the minced garlic and sauté for another minute, being careful not to let it burn.

      Cook the Jackfruit: Add the pulled jackfruit to the skillet. Sprinkle in the smoked paprika, cumin, chili powder, and season with salt and pepper. Stir to combine everything well.

        Add BBQ Sauce: Pour in the BBQ sauce and apple cider vinegar. Mix thoroughly to coat the jackfruit uniformly. Lower the heat, cover the skillet, and let it simmer for about 20-25 minutes, stirring occasionally to prevent sticking.

          Shred Jackfruit: After simmering, use two forks to shred the jackfruit further into smaller pieces, creating a texture that resembles pulled pork. Allow it to cook for an additional 5-10 minutes uncovered, allowing some of the sauce to cook off for a thicker consistency.
