Ingredients

For the Pizza:

1 pound ground beef

1 tablespoon taco seasoning

2 medium-sized flour tortillas

1 cup refried beans

1 cup shredded cheese (cheddar, or a Mexican blend)

1 cup diced tomatoes

½ cup sliced black olives

¼ cup green onions, finely chopped

½ cup sour cream (optional)

1 tablespoon olive oil

Taco sauce to taste

For the Garnish:

Fresh cilantro, chopped (for garnish)

Extra cheese (for topping)

Instructions

Preheat Your Oven: Preheat the oven to 425°F (220°C).

Cook the Ground Beef: In a skillet over medium heat, add the olive oil. Once hot, add the ground beef and cook for about 5-7 minutes, or until it's browned. Drain any excess fat. Stir in the taco seasoning and a splash of water. Cook for an additional 2-3 minutes until combined and fragrant. Set aside.

Prepare the Tortillas: Lightly brush one side of each tortilla with olive oil. Place one tortilla, oiled side down, on a baking sheet.

Layer the Ingredients: Spread half of the refried beans over the tortilla on the baking sheet. Following this, add half of the cooked ground beef, a quarter cup of shredded cheese, half of the diced tomatoes, half of the sliced olives, and half of the green onions.

Add the Second Tortilla: Top with the second tortilla, oiled side up. Repeat the layering process with the remaining refried beans, beef, cheese, tomatoes, olives, and green onions.

Bake the Pizza: Place the pizza in the preheated oven and bake for about 15-20 minutes, or until the tortillas are crispy and the cheese is melted and bubbly.

Final Touches: Once done, remove from the oven and let it cool for a couple of minutes. Carefully cut the Mexican pizza into slices.

Serve and Enjoy: Serve topped with sour cream, extra cheese, fresh cilantro, and a drizzle of taco sauce. Enjoy warm!
