Sweet Raspberry Oat Crumble Bars

For the Filling:

2 cups fresh or frozen raspberries

1/4 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

For the Crust and Topping:

1 1/2 cups rolled oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

    Make the Filling: In a medium saucepan over medium heat, combine the raspberries, granulated sugar, lemon juice, and cornstarch. Cook for about 5-7 minutes, stirring gently until the raspberries start to break down and the mixture thickens. Remove from heat and let cool slightly.

      Prepare the Crust/Topping Mixture: In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking powder, and salt. Mix well.

        Add Butter and Vanilla: Pour in the melted butter and vanilla extract. Stir until the mixture is crumbly but well-combined. Reserve about 1 cup of this mixture for the topping.

          Assemble the Bars: Press the remaining oat mixture firmly into the bottom of the prepared baking dish to create an even crust. Spread the raspberry filling evenly over the crust.

            Add the Topping: Crumble the reserved oat mixture over the raspberry filling, covering it evenly.

              Bake: Place the baking dish in the preheated oven. Bake for 25-30 minutes, or until the top is golden brown.

                Cool and Slice: Allow the bars to cool in the pan for at least 15 minutes before lifting them out using the parchment paper overhang. Cool completely on a wire rack before slicing into squares.

                  Serve: Enjoy the crumble bars warm or at room temperature, and feel free to add a scoop of vanilla ice cream on the side for extra indulgence!
