Sweet Potato Tots with Chili Lime Dip

For the Sweet Potato Tots:

2 large sweet potatoes (about 1.5 lbs), peeled and cubed

1 cup panko breadcrumbs (can use gluten-free if needed)

1/2 cup shredded cheddar cheese (optional)

1 egg, beaten

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

Olive oil spray or 2 tablespoons olive oil

For the Chili Lime Dip:

1/2 cup Greek yogurt or sour cream

Zest of 1 lime

Juice of 1 lime

1 teaspoon honey or agave syrup

1/2 teaspoon chili powder (adjust for spice preference)

Pinch of salt

Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Cook the Sweet Potatoes: In a large pot of boiling water, add the cubed sweet potatoes and cook until fork-tender, about 10-15 minutes. Drain and let cool slightly.

      Mash the Potatoes: In a large mixing bowl, mash the sweet potatoes using a potato masher or fork until smooth. Allow to cool completely.

        Mix Ingredients: Add in the panko breadcrumbs, beaten egg, minced garlic, onion powder, smoked paprika, cumin, and a generous pinch of salt and pepper. If you're using cheese, add that in as well. Mix until fully combined.

          Shape Tots: Using your hands, take small amounts of the mixture (about 1 tablespoon each) and form into small, cylindrical shapes. Place them on the prepared baking sheet, leaving space between each tot.

            Oil the Tots: Lightly spray or brush the formed tots with olive oil which helps them crisp up nicely in the oven.

              Bake: Bake in the preheated oven for about 20-25 minutes, or until golden brown and crispy, flipping halfway through for even cooking.

                Prepare the Chili Lime Dip: While the tots are baking, combine the Greek yogurt (or sour cream), lime zest, lime juice, honey, chili powder, and salt in a small bowl. Stir well until smooth and creamy. Adjust seasoning to taste.

                  Serve: Once the sweet potato tots are done, remove them from the oven and let them cool for a couple of minutes. Serve hot with the chili lime dip on the side.
