Sweet Potato & Spinach Bake

2 large sweet potatoes, peeled and diced

4 cups fresh spinach, washed and roughly chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon nutmeg

Salt and pepper to taste

2 tablespoons olive oil

1/2 cup vegetable or chicken broth

1/4 cup breadcrumbs (optional, for topping)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the sweet potatoes: In a large pot, bring salted water to a boil. Add the diced sweet potatoes and cook until tender, about 10-12 minutes. Drain and set aside.

      Sauté the spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Add the chopped spinach and cook until wilted, about 3-4 minutes. Season with oregano, nutmeg, salt, and pepper. Remove from heat.

        Combine the cheeses: In a large mixing bowl, combine the ricotta, mozzarella, and half of the Parmesan cheese. Stir until well mixed.

          Layer the bake: In a greased 9x13-inch baking dish, start with a layer of sweet potatoes at the bottom. Follow with the sautéed spinach mixture evenly spread over the sweet potatoes. Spoon dollops of the cheese mixture over the spinach, spreading it out as evenly as possible. Repeat the layers until all ingredients are used, finishing with the cheese mixture on top.

            Add broth: Pour the vegetable or chicken broth evenly over the entire dish, allowing it to seep into the layers.

              Top with breadcrumbs: If using, sprinkle the remaining Parmesan cheese and breadcrumbs over the top to achieve a crispy crust.

                Bake: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes or until the top is golden and bubbly.

                  Cool & serve: Allow the bake to cool for about 5-10 minutes before serving. This will help the layers hold together when slicing.
