1 medium sweet potato (about 1 cup, mashed)

1 pre-made pizza crust (store-bought or homemade)

1 cup black beans, drained and rinsed

1/2 cup corn (frozen or fresh)

1/2 cup diced bell peppers (any color)

1/2 cup diced onion

1 cup shredded cheese (cheddar or Mexican blend)

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Sour cream or Greek yogurt (for serving, optional)

Prepare the Sweet Potato: Preheat your oven to 400°F (200°C). Peel and dice the sweet potato into cubes, then place them in a pot of boiling salted water. Cook until tender, about 15 minutes. Drain and mash the sweet potato in a bowl until smooth. Set aside.

    Sauté the Vegetables: In a skillet, heat the olive oil over medium heat. Add the diced onion and bell peppers, and sauté for about 5-7 minutes until they are softened.
