Ingredients

3 cups old-fashioned rolled oats

1 cup nuts (almonds, walnuts, or pecans), chopped

1 cup seeds (pumpkin seeds or sunflower seeds)

1/2 cup unsweetened shredded coconut

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup pure maple syrup

1/4 cup coconut oil, melted (you can substitute with vegetable oil)

1 teaspoon vanilla extract

1/2 cup dried fruits (cranberries, raisins, or apricots), chopped (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a large baking sheet with parchment paper for easy cleanup.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, seeds, shredded coconut, salt, and ground cinnamon. Stir until all dry ingredients are well mixed.

Prepare Wet Ingredients: In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until fully combined.

Combine Ingredients: Pour the wet mixture over the dry ingredients and stir thoroughly to ensure all the oats and nuts are coated with the syrup mixture.

Spread on Baking Sheet: Transfer the granola mixture onto the prepared baking sheet and spread it out evenly. Use a spatula to press it down slightly, which will help the granola clump together as it bakes.

Bake: Place the baking sheet in the oven and bake for about 20-25 minutes, stirring once halfway through to ensure even baking. The granola should turn golden brown and fragrant.

Cool Down: Once done, remove the baking sheet from the oven and let the granola cool completely on the pan. It will harden as it cools.

Add Dried Fruits (Optional): Once cooled, if desired, stir in the dried fruits for added sweetness and texture.

Store: Once completely cooled, transfer the granola to an airtight container. It can be stored at room temperature for up to two weeks.
