1 lb (450g) baby carrots, peeled and trimmed

3 tablespoons honey

2 tablespoons unsalted butter

1 teaspoon olive oil

1 teaspoon cinnamon

1/2 teaspoon nutmeg

Salt and pepper to taste

1 tablespoon fresh parsley, finely chopped (for garnish)

Optional: a sprinkle of sesame seeds for added crunch

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Glaze: In a small saucepan over medium heat, combine the honey, butter, olive oil, cinnamon, nutmeg, salt, and pepper. Stir until the butter is melted and the mixture is smooth and well combined.
