Ingredients

1 cup all-purpose flour

1 cup cornmeal

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup whole milk

1/4 cup unsalted butter, melted

2 large eggs

1/2 cup honey

1 teaspoon vanilla extract

Optional: 1/4 cup corn kernels (fresh, frozen, or canned)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease an 8x8 inch or a 9-inch round pan with butter or non-stick spray.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, cornmeal, sugar, baking powder, and salt. Whisk together until well combined.

Combine Wet Ingredients: In a separate bowl, whisk together the milk, melted butter, eggs, honey, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to over-mix. If desired, fold in the corn kernels for added texture and sweetness.

Bake the Cornbread: Pour the batter into the prepared baking pan, spreading evenly. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Prepare Honey Butter: While the cornbread is baking, prepare the honey butter by mixing 1/4 cup unsalted butter (softened) with 1/4 cup honey in a small bowl. Blend until creamy and smooth. You can adjust the sweetness by adding more or less honey to taste.

Cool and Serve: Once the cornbread is done, allow it to cool for about 10 minutes in the pan before slicing. Serve warm with generous dollops of honey butter on top.
