16 oz (450g) gnocchi (store-bought or homemade)

1 cup fresh sweet corn kernels (about 2-3 ears of corn)

1 cup basil leaves, packed

1/2 cup grated Parmesan cheese (plus more for topping)

1/2 cup pine nuts (toasted)

2 cloves garlic, minced

1/4 cup extra virgin olive oil

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup mozzarella cheese, shredded

1/2 teaspoon crushed red pepper flakes (optional)

Fresh basil leaves for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Pesto: In a food processor, combine the sweet corn kernels, basil leaves, Parmesan cheese, toasted pine nuts, minced garlic, olive oil, salt, and pepper. Blend until smooth and creamy, adding more olive oil if necessary to achieve the desired consistency.

      Cook the Gnocchi: Bring a pot of salted water to a boil and cook the gnocchi according to package instructions. Fresh gnocchi will float to the surface when cooked. Once done, drain and set aside.

        Combine Ingredients: In a large mixing bowl, combine the cooked gnocchi with the sweet corn pesto, halved cherry tomatoes, and crushed red pepper flakes (if using). Gently mix until everything is well coated.

          Assemble the Bake: Transfer the gnocchi mixture to a greased baking dish (about 9x13 inches). Sprinkle the shredded mozzarella cheese evenly over the top. Add additional grated Parmesan cheese for a nice golden crust.
