Sweet Corn & Jalapeño Cheddar Muffins

1 cup sweet corn kernels (fresh or frozen)

1 cup all-purpose flour

1 cup cornmeal

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk

1/4 cup vegetable oil

2 large eggs

1 cup sharp cheddar cheese, grated

1-2 jalapeños, finely chopped (adjust based on spice preference)

1 tablespoon honey (optional for sweetness)

Instructions
 

Preheat Oven: Start by preheating your oven to 375°F (190°C). Grease or line a muffin tin with paper liners.

    Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, cornmeal, baking powder, baking soda, and salt. Whisk together until evenly mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk, vegetable oil, and eggs until smooth. If using honey, add it to the wet mixture.

        Incorporate Corn and Cheese: Fold the sweet corn kernels, grated cheddar cheese, and chopped jalapeños into the wet mixture until evenly distributed.

          Combine Mixtures: Pour the wet mixture into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

            Fill Muffin Tins: Evenly distribute the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.

              Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

                Cool: Once baked, remove the muffins from the oven and allow them to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

                  Serve: These muffins are delicious served warm and make a great snack, breakfast item, or side dish.
