Ingredients

1 can (15 oz) sweet corn, drained

1 cup cooked chickpeas (canned or boiled)

2 tablespoons tahini

2 tablespoons olive oil, plus extra for drizzling

1 tablespoon lemon juice

1 garlic clove, minced

1 teaspoon ground cumin

½ teaspoon smoked paprika

Salt and pepper to taste

4 slices of whole grain bread

Fresh herbs (e.g., cilantro, parsley) for garnish

Cherry tomatoes, halved (optional for topping)

Instructions

Prepare the Sweet Corn Hummus: In a food processor, combine the drained sweet corn, cooked chickpeas, tahini, olive oil, lemon juice, minced garlic, ground cumin, smoked paprika, salt, and pepper. Blend until smooth and creamy. If the mixture is too thick, add a little water or olive oil until you reach your desired consistency.

Toast the Bread: While the hummus is blending, toast the slices of whole grain bread until they are golden brown and crispy.

Assemble the Toast: Spread a generous layer of sweet corn hummus on each slice of toasted bread.

Garnish: Drizzle with a little extra olive oil, and sprinkle fresh herbs on top. If using, add halved cherry tomatoes for an extra splash of color and flavor.

Serve: Cut the toast into halves or quarters for easy eating, and enjoy it as a delightful snack, brunch, or light meal.
