Ingredients

1 cup rolled oats

1/2 cup unsweetened cocoa powder

1/2 cup chia seeds

1/2 cup almond butter (or peanut butter)

1/3 cup honey or maple syrup

1/4 cup chocolate chips (dark or semi-sweet)

1/4 cup desiccated coconut (optional)

1/4 cup chopped nuts (almonds, walnuts, or pecans)

1/2 teaspoon vanilla extract

Pinch of salt

Instructions

Prepare the Baking Dish: Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

Combine Dry Ingredients: In a large bowl, mix together the rolled oats, cocoa powder, chia seeds, desiccated coconut (if using), chopped nuts, and salt until well combined.

Mix Wet Ingredients: In a separate bowl, whisk together the almond butter, honey (or maple syrup), and vanilla extract until smooth and evenly mixed.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until everything is moistened and mixed thoroughly. If the mixture feels too dry, you can add a tiny bit of water or almond milk until the consistency is easier to work with.

Add Chocolate Chips: Gently fold in the chocolate chips until evenly distributed throughout the mixture.

Press into Dish: Transfer the mixture into the prepared baking dish and press it down firmly with your hands or a spatula to create an even layer.

Chill: Cover the dish with plastic wrap and refrigerate for at least 1-2 hours, or until set and firm.

Cut into Bars: Once set, lift the bars out of the dish using the parchment overhang and place on a cutting board. Cut into desired bar sizes.

Store: Enjoy immediately or store in an airtight container in the fridge for up to one week.
