2 cups grated carrots

1/2 cup all-purpose flour

1/4 cup cornmeal

1/4 cup grated Parmesan cheese

2 large eggs, lightly beaten

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

1/4 cup chopped fresh cilantro

1/4 cup green onions, sliced

Vegetable oil for frying

6 small corn tortillas

1 avocado, sliced

Lime wedges (for serving)

Fresh salsa (for topping)

Instructions
 

Prepare the Carrot Mixture: In a large mixing bowl, combine the grated carrots, flour, cornmeal, Parmesan cheese, beaten eggs, smoked paprika, ground cumin, salt, black pepper, and cayenne (if using). Mix well until all ingredients are evenly incorporated. Fold in chopped cilantro and green onions.

    Heat the Oil: In a large skillet, pour about 1/4 inch of vegetable oil and heat over medium heat. To check if the oil is hot enough, drop a small amount of the carrot mixture into the oil; it should sizzle immediately.

      Fry the Fritters: Using a tablespoon, drop heaping spoonfuls of the carrot mixture into the hot oil, flattening them slightly to form fritters.
