Ingredients

1 ½ cups rolled oats

1 cup almond flour

½ cup almond butter

¼ cup honey or maple syrup

¼ cup coconut sugar (or brown sugar)

½ cup almond milk (or any milk of choice)

1 tsp vanilla extract

½ tsp baking soda

¼ tsp salt

½ cup chopped dark chocolate or chocolate chips (optional)

¼ cup chopped almonds (optional, for crunchy texture)

¼ tsp ground cinnamon (optional, for flavor)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal later.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, baking soda, salt, and cinnamon. Mix until well combined.

Combine Wet Ingredients: In a separate bowl, mix together the almond butter, honey (or maple syrup), almond milk, and vanilla extract. Stir until smooth and creamy.

Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until everything is well incorporated. If you love a chocolatey touch, fold in the dark chocolate or chocolate chips at this stage, along with the chopped almonds if using.

Spread Batter: Transfer the mixture into the prepared baking dish. Use a spatula or your hands to spread it evenly and press it down firmly to pack it tightly.

Bake: Place in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

Cool and Cut: Once baked, remove the dish from the oven and allow it to cool completely in the pan. Once cooled, use the parchment paper to lift the bars out onto a cutting board. Cut into squares or rectangles as preferred.

Store: Store any leftovers in an airtight container at room temperature for up to a week, or in the refrigerator for fresher longer storage.
