4 large flour tortillas

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 cup zucchini, sliced thin

1 cup yellow squash, sliced thin

1 red bell pepper, sliced

1 cup corn kernels (fresh or frozen)

1 small red onion, thinly sliced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Sour cream and salsa for serving

Prep the Vegetables: In a large mixing bowl, combine the zucchini, yellow squash, red bell pepper, corn, and red onion. Drizzle with olive oil, then sprinkle in garlic powder, cumin, salt, and pepper. Toss until the vegetables are well coated.

    Cook the Vegetables: Heat a large skillet over medium heat. Add the seasoned vegetables and sauté for about 5-7 minutes until they are tender and slightly caramelized. Remove from heat and let them cool slightly.

      Assemble the Quesadillas: Preheat another skillet or griddle over medium heat. Place one tortilla on the skillet. On one half of the tortilla, sprinkle a layer of mozzarella and cheddar cheeses, followed by a generous amount of sautéed vegetables. Top with another layer of cheese, then fold the tortilla in half.

        Cook the Quesadilla: Cook the folded quesadilla for about 3-4 minutes on each side, or until the cheese is melted and the tortilla is golden and crispy. Repeat the process with the remaining tortillas and filling.

          Serve: Once all quesadillas are cooked, slice them into wedges. Garnish with fresh cilantro (if desired) and serve with sour cream and salsa on the side.
