Summer Berry Angel Food Trifle

1 store-bought or homemade angel food cake, cut into 1-inch cubes

2 cups heavy whipping cream

1 cup powdered sugar

2 teaspoons vanilla extract

2 cups strawberries, hulled and sliced

1 cup blueberries

1 cup raspberries

1 teaspoon lemon juice (optional)

Fresh mint leaves for garnish (optional)

Prepare the Cream: In a medium mixing bowl, beat the heavy whipping cream with a hand mixer on medium speed until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to beat until stiff peaks form. Set aside.

    Prep the Berries: In a separate bowl, combine the sliced strawberries, blueberries, and raspberries. If desired, drizzle the lemon juice over the berries to enhance their flavor and toss gently.

      Assemble the Trifle: In a large trifle dish or individual serving cups, create layers starting with a layer of angel food cake cubes at the bottom.

        Layering: Top the cake cubes with a generous layer of the whipped cream mixture, followed by a layer of mixed berries. Repeat this process, layering the cake, whipped cream, and berries until you reach the top of your dish.
