2 cups sugar snap peas, trimmed and rinsed

1 cup cherry tomatoes, halved

½ cup radishes, thinly sliced

¼ cup red onion, finely diced

¼ cup feta cheese, crumbled

¼ cup toasted almonds, roughly chopped

2 tablespoons fresh mint leaves, chopped

3 tablespoons olive oil

1 tablespoon lemon juice

Prepare the peas: Bring a small pot of salted water to a boil. Add the sugar snap peas and blanch for about 2-3 minutes until bright green and tender-crisp. Immediately transfer them to a bowl of ice water to stop the cooking process. Drain and set aside.

    Combine the vegetables: In a large mixing bowl, combine the blanched sugar snap peas, halved cherry tomatoes, sliced radishes, and diced red onion. Toss gently to mix the vegetables.
