Stuffed Bell Peppers with Sausage and Rice

4 large bell peppers (any color)

1 pound Italian sausage (mild or spicy, based on preference)

1 cup cooked rice (white or brown)

1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, drained

1 cup shredded mozzarella cheese

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Olive oil (for sautéing)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.

      Cook the Sausage: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a wooden spoon, about 5-7 minutes.

        Sauté Vegetables: Add the chopped onion and garlic to the skillet with the sausage, cooking until the onion is translucent, about 3-4 minutes.

          Mix the Filling: In a large bowl, combine the cooked sausage mixture with the cooked rice, drained diced tomatoes, half of the mozzarella cheese, Italian seasoning, paprika, salt, and pepper. Stir well until everything is nicely incorporated.

            Stuff the Peppers: Carefully spoon the sausage and rice mixture into the hollowed-out bell peppers, packing the filling tightly. Place the stuffed peppers in a baking dish, standing upright.
