2 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar

1 teaspoon lemon juice

1 teaspoon vanilla extract

2 cups heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract (for the whipped cream)

1 package (14 ounces) of graham crackers

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare Strawberries: In a medium bowl, combine the sliced strawberries, granulated sugar, lemon juice, and vanilla extract. Mix gently, cover, and let sit for about 30 minutes to macerate. This helps to draw out the juices from the strawberries.

    Make Whipped Cream: In a large bowl, using an electric mixer, beat the heavy cream on medium-high speed until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to beat until stiff peaks form. Do not overbeat; you want it to be fluffy.

      Layering the Cake:

        - Begin by spreading a thin layer of whipped cream on the bottom of a 9x13 inch dish.

          - Place one layer of graham crackers over the whipped cream, covering the bottom entirely.

            - Add a layer of the macerated strawberries, ensuring to pour some of their juices over the graham crackers as well.

              - Top the strawberries with a generous layer of whipped cream.

                - Repeat this layering process (graham crackers, strawberries, whipped cream) until you’ve used all your ingredients, finishing with a layer of whipped cream on top.

                  Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for the best flavor and texture. This allows the graham crackers to soften and absorb the flavors.

                    Serve: Before serving, garnish the top of the cake with additional fresh strawberries and mint leaves, if desired. Cut into squares and enjoy the chilled delight!
